Mexican Mac & Cheese

Got from Better Homes and Gardens March 2011

12 oz dried rigatoni or mostaccioli
1 lb bulk pork sausage
1 cup shopped onion
1 16 oz jar green medium-hot salsa
2 8 0z pkg. shredded monterey jack cheese (4 cups)

Tomato wedges, sliced jalapeno pepper, and chopped fresh cilantro. Salsa (optional)

Cook Pasta

Preheat oven to 350 and lightly grease 3 qt baking dish.

Cook sausage and onion, drain. Stir in green salsa.

Layer half of the pasta, half of the meat, and half the cheese. Repeat layers.

Bake uncovered for 35 min. Let stand 10 minutes. Add toppings.
