Gingery Peanut Noodles w/Chicken
In a blender combine 1 cup water, 1/2 cup peanut butter, 3 Tb rice vinegar, 3 Tb soy sauce, 1 Tb brown sugar, and 1 tsp grated fresh ginger. Toss w/ 8 oz spaghetti (cooked), 1 1/2 cups shredded rotisserie chicken, 1 sliced red bell pepper, 1/2 cucumber cut into strips, and 2 sliced scallions.
