zucchini bread


Ingredients Edit and Save

Original recipe makes 2 loavesChange Servings

Directions

  1. Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
  4. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
Got the recipe from "All Recipes" - used 1 1/2 cups white sugar instead of 2 1/4.  Used 1/2 cup apple sauce and 1/2 oil.  Used 2 mashed bananas and 2 egg whites instead of 3 eggs.  Used half whole wheat flour and half all purpose.

Whole Wheat Waffles

2 eggs
1 3/4 C Skim
1/4 C Canola
1/4 C Applesauce
1 t. Vanilla
1 C Whole Wheat Flour
3/4 C White Flour
4 tsp baking powder
1 Tb Sugar
1 tsp salt

Combine Wet ingredients, Combine Dry Ingredients.  Add dry to wet.  Cook in waffle maker

Whole Wheat Blueberry Muffins


INGREDIENTS:
1 1/2 cups whole wheat flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1/2 cup unsweetened applesauce
1 pint fresh blueberries
DIRECTIONS:
1.Preheat oven to 400 degrees F (200 degrees C). Grease 12 muffin cups, or line with paper liners. Whisk together the flour, sugar, salt, and baking powder in a large bowl.
2.Whisk vegetable oil, egg, milk, and applesauce together in a separate bowl until smooth, and stir the liquid ingredients into the flour mixture until moistened. Lightly stir in the blueberries. Spoon the batter into the prepared muffin cups, filling them 2/3 full.
3.Bake muffins in the preheated oven until they rise and the tops are golden brown, about 20 minutes. A toothpick inserted into the center of a muffin should come out clean.
